White teas come primarily from China (Fujian Province,) where tea began as a medicine and grew into a beverage. White teas are produced annually on a very limited scale and the spring harvest (Silver Needle) is prized around the world. White tea undergoes the least amount of processing and is the purest form of tea produced from the Camellia Sinensis plant. The highest quality white teas are harvested before the bud has opened, often before the sun comes up, and are notable for the appearance of a fuzzy white down on the tea leaves. After being plucked, the leaves are steamed and dried to preserve a high amount of anti-oxidants and a smooth, delicate flavour. Easily said, white tea is premature, unprocessed green tea, with a pale appearance and no rough edges. White tea contains less caffeine and more health benefits than green, oolong, and black teas.
